It is simplicity itself and very good. This will now be a staple of mine. I'll try a different chip next time. My son liked it as well.
Lets talk chips a minute on this RCD. I researched and I believe the healthiest potato chips are by the Kettle brand chips. They have several kinds of gluten free chips cooked in safflower, or sunflower or canola oils. In any case I used their kettle sweet onion potato chips in this recipe. I've been eating 1 serving, measured out into sandwich bags, kettle chips once or twice a week sense I finished the 45 day Red Color Diet. Always with a high protein, low fat meal.
1 pound boneless, skinless, chicken breast, cut into 1x3 inch strips .
1 cup plus 2 tablespoons buttermilk
1 large egg
2 cups potato chips ( your flavor choice)
Put the chicken in a resealable plastic bag with the cup of buttermilk overnight. ( or early morning for that night).
Preheat oven to 400 degrees and grease a baking sheet ( I sprayed mine with olive oil.
In a food processor ( I used my blender) pulverize the chips until you have 2 cups. Place them in a large resealable plastic bag.
In a small bowl whisk together the 2 tablespoons of buttermilk and the egg .Take 4-5 strips at a time, allow the excess buttermilk to drip off, dip into the egg mixture and then add to the plastic bag with the potato chips to coat thoroughly . Transfer to the prepared pan. Bake for 15-20 minutes or until golden and crisp on the outside and opaque throughout. Enjoy!
