The only muffins I ever had pre-diet where sugar laden chocolate ones That were more cake than anything. I'm off chocolate for now, but this book does have some delicious looking ones. In this book I saw so many recipes that I never would have dreamed of doing and am looking forward to trying. This book- and yes I read through it , checking off all I want to try, taking in her tips- carries not only sweet muffins but Breakfast, Lunch and Supper muffins that could be a meal in itself. Everything from Roasted Feta Muffins to Fresh Herb Ricotta Muffins. Have your veggies in a muffin with Zucchini Muffins. How about a peanut butter lunch muffin? All kinds of fruit muffins and grain and nut muffins. So many choices. I love so many choices. I like cooking-baking with Almond flour and she uses it a lot of times. Also she has a basic Brown rice-tapioca flour-Potato starch mix for the others. You can just mix it up ( I found all at Super One and Brookshires) to keep in fridge for a quick baking. Most muffins will freeze well in zip lock bags- air removed.
Oh! I forgot- The Author is Camilla V. Saulsbury. She gives all kinds of tips for altering recipes for your needs ( like subbing in honey for sugar) ( going casein free) .And plain cooking tips I didn't know. Did you know to test your baking powder every 6 months for it's potency? She tells how to in the book. Easy to use paperback book. Good pictures of some of the muffins.
